While most of us know Chia from the popular and peculiar Chia Pets, Chia is far more than a humorous ornamental plant. Chia (Salvia hispanica) is one of the best-known plant sources of healthy fatty acids, which account for almost two-thirds of Chia's total fatty acid make-up. Chia Seeds are also an excellent source of fiber and a good source of calcium.

Healthy PB&J Sandwich with Cardamom Nut Butter & Blackberry-Chia Jam
Ditch sugary jelly or jam for fresh blackberries with this healthy PB&J sandwich. With a pinch of cardamom in the nut butter, it’s a welcome upgrade to this childhood favorite. Cardamom has a zesty citrus flavor that’s sweet and spicy at the same time. Mixed with the nutty, rich taste of almond butter or smooth peanut, and paired with the sweet-tart tang of blackberries, well, we’d tell you how next-level it is but our mouths are too full of the next bite. You butter try this recipe!
Healthy PB&J Sandwich with Cardamom Nut Butter & Blackberry-Chia Jam
- 1 cup blackberries
- 1 cup crunchy almond butter ( or peanut butter)
- 1 Tbsp. chia seeds
- 1/4 tsp. ground cardamom
- Gluten-free bread (of choice)
- To make jam: In medium saucepan over medium heat, bring blackberries and ¼ cup water to boil.
- Stir in chia seeds, reduce heat to simmer and cook for approximately 15 minutes, stirring almost constantly, until mixture is very thick.
- Remove from heat and let cool. (Note: Jam can be stored in airtight container for up to a week.)
- To make nut butter: In bowl, stir together nut butter and cardamom.
- Spread jam and nut butter on bread to make sandwich.
