Gluten-Free Orange Muffins

Made with orange juice, orange zest and topped with a delicious orange glaze, these muffins offer a perfect blend of rich, citrus flavor and better-for-you ingredients. Orange Muffins

Orange Muffins (Gluten-Free)

Dry ingredients

  • 1 tsp. baking soda
  • 3/4 cup sugar
  • 1-1/3 cup gluten-free flour

Wet ingredients

  • 1/4 cup butter
  • 2 eggs
  • 1/3 cup orange zest
  • 1 cup coconut milk
  • 1/2 cup orange juice
  • 1/2 tsp. orange extract

Orange glaze

  • 1 cup powdered sugar
  • 2 Tbsp. orange juice
  1. In large bowl, add wet ingredients and whisk until well combined. Fold in orange zest until well combined.
  2. In medium bowl, combine dry ingredients.
  3. Add dry ingredients to wet ingredients and mix until batter is well combined.
  4. Using cookie scoop, fill each muffin cup evenly with batter.
  5. Preheat oven to 350 degrees F. and spray muffin pan with oil.
  6. Bake for 15 minutes or until toothpick comes out clean. Allow muffins to cool.
  7. In small bowl add orange glaze ingredients and mix until thick consistency forms.
  8. Spread orange glaze over muffins and sprinkle orange zest on top.
  9. Serve at room temperature and store in airtight container for 2-3 days.
