Red Star® Active Dry Yeast is cake yeast in a semi-formant state.

The drying process in its manufacture moisture content, giving it a longer shelf life than cake yeast while retaining optimum activity. When activated, it provides ultimate baking activity in all yeast dough - low sugar to highly sweetened breads. Red Star Active Dry Yeast is designed for yeast-leavened bread and dough. The finished product will have the particular flavor, texture and consistency associated with a yeast-leavened product.

Directions

Approximately 2¼ tsp. equal one ¼ oz packet yeast. Use a thermometer to determine liquid temperatures:

Traditional Method: Dissolve 1 package of yeast in ¼ cup of warm tap water (110° - 115°F). Add ½ tsp. of sugar. Wait 5-10 minutes for mixture to foam (proof).

Mixed Method: Blend yeast with flour and other dry ingredients.

Warm liquids to 120° - 130°F.

Bread Machine: Use liquids at 80°F.

Simple Sheet Pan Pizza

Sheet pan pizza is the trusty workhorse of the pizza world. It feeds a crowd and the chewy, tender crispiness of the crust is sturdy enough to hold a load of toppings. This pizza is sprinkled with tasty veggies, but add what you desire to your heart's content. Make the dough ahead of time and, when hunger hits, have your family choose their section and add what they like! Simple Sheet Pan Veggie Pizza

Crust

  • ½ cup + 2 Tbsp. water
  • ½ tsp. dry active yeast
  • ½ tsp. sugar
  • 2 cups + ½ cup organic all-purpose flour
  • 1 tsp. salt
  • 2 Tbsp. olive oil
  • 2 Tbsp. water

Topping

  • ½ cup pizza sauce
  • 1 cup shredded mozzarella (vegan or cow’s milk cheese)
  • ¼ green bell pepper (thinly sliced)
  • ¼ red bell pepper (thinly sliced)
  • ½ cup thin sliced mushrooms
  1. In large bowl, stir together ½ cup + 2 Tbsp. water, yeast, sugar and ½ cup flour. Let sit 15 minutes.
  2. Add 2 cups flour, salt, olive oil and 2 Tbsp. water. Knead dough thoroughly; cover and let sit 2 hours.
  3. Preheat oven to 375 degrees F. Line sheet pan with parchment paper.
  4. On floured surface, roll out dough to rectangle shape. Place dough onto baking sheet. (Tip: To avoid air bubbles, use fork to pierce dough all over, focusing on center, to within an inch of edge.)
  5. Top with pizza sauce, cheese, peppers and mushrooms.
  6. Bake 20-25 minutes until crust is cooked and cheese is melted.
