Snickerdoodle Cookie Ice Cream Sandwiches
Here’s an easy and pleasing no-bake treat to make on a hot summer day. Grab some gluten-free Simple Mills Soft Baked Cookies and create ice cream sandwiches! They’re as simple as scoop, plop, press and roll. With the sweet combo of snickerdoodle cookies, salted caramel ice cream and a sprinkling of cinnamon and coconut sugar, it’s the flavors that do all the work! Get the kids involved with this one.
Snickerdoodle Cookie Ice Cream Sandwiches
- 1 pint salted caramel ice cream
- 1 box Simple Mills Soft Baked Snickerdoodle Cookies
- 2 Tbsp. cinnamon
- ½ cup coconut sugar
- On large plate or baking sheet, arrange cookies face down.
- Scoop ice cream onto back of cookie and place another cookie on top.
- In bowl, mix together coconut sugar and cinnamon.
- Roll side of each ice cream sandwich into cinnamon-sugar mixture to cover ice cream.
- Serve immediately or freeze in freezer-safe container. (Remove from freezer and let thaw for 5-10 minutes before serving.)
