Our mom’s favorite salsas check two boxes: “not too spicy” and “made with simple ingredients.” So we made a Mild Salsa Roja that checks both of those boxes! Inspired by memories of our grandma and our mom using minimal ingredients to make the best homemade salsas, we called these “Casera-Style” salsas (which means, “homemade”). We can’t wait for you to try it, so you can get a taste of what it’s like to be in our home and at our table.

Grilled Shrimp Tacos

A quick lime-and-spice marinade gives the shrimp a zesty kick, while fresh pineapple and jalapeño add a sweet-meets-heat balance that’s impossible to resist. Pile everything into a warm tortilla, sprinkle on some cilantro and finish with a squeeze of lime and your favorite salsa. Light, vibrant and packed with summery flavor, this easy taco recipe is your new go-to for weeknights or weekend cookouts. Four Small Plates Have Individual Servings of Grilled Shrimp Tacos With Fresh Lime, Sliced Jalapeno and Cilantro.

Grilled Shrimp Tacos

Shrimp

  • 12 oz. small shrimp (peeled and deveined)
  • 2 Tbsp. olive oil
  • 2 Tbsp. lime juice
  • 1 tsp. chili powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Tacos

  • 8 small corn or flour tortillas
  • 1 cup pineapple (chunks (canned or fresh))
  • 2 limes sliced into wedges
  • 1/2 cup cilantro leaves
  • 1 jalapeno (sliced)
  • 1 jar salsa
  1. In zip-tied bag or airtight container, marinade shrimp in olive oil, lime juice and spices.
  2. Preheat grill to medium-high heat, about 450 degrees F.
  3. Using skewers, grill grate or grill basket, grill raw shrimp 5 minutes total, flipping once. (Note: If using pre-cooked shrimp, grill 1-2 minutes to heat through.) Remove from grill when internal temp is 145 degrees F.
  4. Grill tortillas 3-4 minutes.
  5. For each taco, include 4 shrimp, pineapple slices, jalapeno and cilantro.
  6. Before serving, squeeze fresh lime onto tacos and top with salsa.
