Gluten-Free Cherry Crisp

[vc_row][vc_column][vc_column_text]Bursting with juicy dark sweet cherries and kissed with the warm flavor of almond extract, this cherry crisp filling bubbles up beneath a golden, buttery crumble that just so happens to be vegan and gluten-free. The topping is a perfect mix of tender oats, light brown sugar and a pinch of salt, creating that dreamy contrast of crisp and soft in every bite. It’s comfort food made wholesome — and trust us, it needs a big scoop of vanilla ice (or “nice”) cream on top. Whether you're serving a crowd or sneaking an extra spoonful straight from the pan, this cherry crisp is pure fruity joy. A Gluten-Free Cherry Crisp Has a Handful of Fresh Cherries on Top.

Gluten Free Cherry Crisp

Topping

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup packed light brown sugar
  • 2/3 cup gluten-free old-fashioned oats
  • 1/4 tsp. kosher salt
  • 6 Tbsp. vegan butter (melted)

Filling

  • 2 lbs. frozen dark sweet cherries
  • 1/4 cup coconut sugar
  • 1 Tbsp. cornstarch
  • 1 tsp. almond extract
  1. Preheat oven to 350 degrees F.
  2. In large bowl, combine flour, brown sugar, oats and salt. Add melted butter and mix gently until it forms a clumpy texture.
  3. In separate large bowl, toss together cherries, sugar, cornstarch and almond extract. Transfer cherry mixture to 9- or 10-inch pie plate or 9x9-inch baking dish. Top with flour mixture, leaving some smaller and larger clumps.
  4. Bake 45 to 50 minutes, until topping is golden and crisp and filling is bubbling. Cool for at least 10 minutes before serving.
