Vegan Hibiscus-Glazed Cocoa Cake Donuts

Planning a romantic night in with your sweetie? Top the evening off with a dessert drizzled in a deep-red glaze to seduce their taste buds. These light-and-fluffy chocolaty cake donuts are far healthier than their fried counterparts – but taste just as decadent. To spice things up even more, add two cups of chocolate chips to the batter before baking!

Vegan Hibiscus-Glazed Cocoa Cake Donuts

Donuts

  • 2-1/2 cups King Arthur All-Purpose Flour
  • 1-1/3 cups cocoa powder
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1-1/2 cups cane sugar
  • 3/4 tsp. Himalayan pink salt
  • 1-1/2 cups oat milk, (room temperature)
  • 3 tsp. vanilla extract
  • 1/3 cup avocado oil
  • 4 Tbsp. Bob’s Red Mill Egg Replacer + 8 Tbsp. water

Glaze

  • 1 Tbsp. lemon juice
  • Zest of 1 lemon
  • 1-1/2 cups powdered sugar
  • 1 Tbsp. Suncore Foods Fuchsia Hibiscus Super Juice Powder
  • 2 Tbsp. + 2 tsp. oat milk (as needed for consistency)
  1. Preheat oven 350 degrees F.
  2. In stand mixer, sift flour, cocoa powder, baking powder and baking soda. Add sugar and salt. Mix to combine.
  3. In separate bowl, combine oat milk, vanilla, oil and egg replacer. Combine wet ingredients with dry ingredients in stand mixer and mix until just combined.
  4. Pour batter into donut pan until each well is 3/4 full.
  5. Bake 12 to 15 minutes. Test readiness by inserting toothpick into donut. If it comes out clean, remove from oven and let cool for 1 minute. Loosen the edges and remove donuts from pan. Transfer donuts to wire rack to continue cooling.
  6. Meanwhile, in bowl, combine all glaze ingredients until smooth. Once donuts are cooled, dip the top half into glaze and return to wire rack.
