Minty Prosciutto & Watermelon Skewers
If you’ve never paired watermelon with prosciutto then you need to stop what you’re doing and change that. The refreshing fruit perfectly complements the salty meat, and the addition of mint takes this fusion from good to great. Finish these skewers off with a drizzle of orange blossom honey balsamic reduction and you have a tasty appetizer for any occasion.
3 cups watermelon, cubed
6 slices prosciutto
1/2 cup orange blossom honey balsamic vinegar
Small handful of fresh mint
- In skillet on medium-high heat, cook balsamic vinegar for 20 minutes, stirring frequently until balsamic begins to thicken. Continue to cook until balsamic is reduced.
- Cut each slice of prosciutto in half lengthwise. Remove leaves from stems of mint.
- Layer watermelon, prosciutto and mint onto skewers. Drizzle reduced balsamic over assembled skewers and serve chilled.
