There are a thousand ways to dress a salad but some work better than others. Tired of using the same boring dressings? Try marching to a new “beet” with this vegan Thousand Island. While traditional Thousand Island is made with mayonnaise and eggs, this recipe cleverly calls for all vegan ingredients for a healthier and better-for-you way to top your salad. Plus, the addition of beets gives this dressing a deliciously sweet flavor and a beautiful pink color! Your salad has never tasted, or looked, so good.
1/2 cup soy-free vegan mayonnaise
2 tsp. apple cider vinegar
2 Tbsp. cooked beets, diced
2 Tbsp. horseradish
2 Tbsp. chopped green onions (optional)
- In a jar, combine all ingredients and mix well.
- Serve immediately, or cover jar and place in refrigerator.
