Dairy-Free Chicken Pasta With Caramelized Onions & Pine Nuts
The season of comfort food is upon us. If pasta is your go-to feel-good food, you’re going to love this delicious dish. The best part? It’s not only comforting, it’s also high in protein, gluten-free and dairy free. After just a few simple steps, you’ll be holding a bowl full of creamy pasta, mouthwatering caramelized onions and chunks of hearty chicken. If you ask us, it’s enough to soothe anyone’s soul.
Dairy-Free Chicken Pasta With Caramelized Onions & Pine Nuts
Caramelized onions
- 2 yellow onions (sliced)
- ¼ tsp. garlic salt
- 2 Tbsp. Nutiva buttery coconut oil
- 2 Tbsp. olive oil
Pasta
Chicken
- 1 lb. chicken breasts (cut into strips)
- 2 Tbsp. olive oil
- 2 tsp. minced garlic
- ½ tsp. oregano
- ½ tsp. thyme
- ½ tsp. dried basil
- ¼ tsp. dried parsley
- Dash sea salt
Dairy-free Alfredo sauce
- ¼ cup plant-based cream cheese
- ¼ cup vegan parmesan cheese
- 3 Tbsp. Sproud plant-based milk
Garnish
- Fresh pine nuts
- Vegan parmesan
- In 12-inch pan or a cast iron skillet, heat coconut oil and 2 Tbsp. of olive oil over medium heat.
- Add onions and sauté for 5 minutes or until starting to soften.
- Add salt, reduce heat to medium low and cook for 30 minutes, stirring every few minutes, or until onions are soft and golden brown.
- While onions are caramelizing, cook pasta according to package directions. Drain and set aside.
- Season chicken with spices.
- In separate pan, heat olive oil on medium-high heat.
- Add chicken and cook 8 minutes, flipping halfway through.
- Add Alfredo sauce ingredients; stir to combine.
- Add onions and cooked pasta; toss to combine.
- Serve topped with pine nuts and vegan parmesan.
Tips:
If at any point onions start to stick to pan, reduce heat to low and stir continuously to prevent burning.
