Boasting a milk, nutty flavor, it can be used to enhance the taste and texture of baked goods, including cookies and muffins.

Cooking & baking tips:
Substitute 25% conventional flour with amaranth flour in gluten-free baking.
The powder is quite absorbent, so you may need to add more water or other wet ingredients, such as applesauce.
Combine with other gluten-free flours or starches to make breads, cookies, pancakes and more
Use amaranth flour on its own for breading or to thicken sauces, stews, soups or even smoothies.
2 cups Vitacost™ Certified Organic Whole Grain Amaranth Flour
1½ teaspoons baking powder
1/2 teaspoon Vitacost™ Baking Soda
1/2 teaspoon salt
1/4 cup lemon juice
2 tablespoons lemon zest
1/4 cup Vitacost™ Extra Virgin Certified Organic Coconut Oil - Non-GMO
1 egg, beaten
1 teaspoon Vitacost™ Certified Organic Pure Vanilla Extract
1/4 cup water
1/4 cup finely shredded coconut
3/4 cup turbinado sugar
Instructions: Preheat oven to 350°F
To make the dough, in a large bowl, whisk together amaranth flour, baking soda, baking powder and salt. In a small bowl, stir together lemon juice and zest, coconut oil, egg, vanilla, water, coconut and sugar. Pour wet ingredients into dry ingredients and stir until well combined.
Line two baking sheets with parchment paper. Scoop dough onto baking sheet using a mini ice cream scoop. Flatten slightly with the back of a fork. Bake for 8 minutes or until the edges are golden. Allow to cool for 2 minutes and remove to cooling rack. Store in an airtight container. Makes approximately 24 cookies.
Tip: If you'd like to substitute the egg, try a flax egg. In a small bowl, stir together 1 tablespoon ground flaxseed and 3 tablespoons water. Allow to thicken (approximately 5 minutes).

Lemon & Ginger Green Tea Muffins
Makes 8 muffins
Macros per muffin: 170 calories | 7 g protein | 17.2 g carbs | 9.6 g fat | 1.8 g sugar | 1.5 g fiber
1/3 cup unsweetened almond milk
Juice of 2 lemons
Zest of 1 lemon
2/3 cup oat flour
¼ cup Vitacost Gluten-Free Amaranth Flour
1 scoop ARO Vanilla Whey Protein ISO
1 sachet Vitacost Positivi-Tea Lemon Myrtle Ginger Organic Green Tea, tea leaves removed from sachet
- Preheat oven to 350 degrees F and place 8 silicon muffin liners (or paper liners in muffin pan) on a sheet pan.
- In a large bowl, add first 5 ingredients and whisk until smooth.
- Add remaining ingredients and stir until well combined.
- Spoon muffin batter into liners, filling each about 2/3 full.
- Bake 14-18 minutes, or until a toothpick comes out clean.
- Let cool 30 minutes before serving.
