Directions

In a medium saucepan, bring 2 cups water to a boil. Add 1 cup oats, reduce heat to a simmer and cook for 3-6 minutes, depending on desired consistency, stirring occasionally. Serves 2.

Berry Bliss Balls

  • 1 cup rolled oats
  • ½ cup peanut butter
  • 1 Tbsp. chia seeds
  • 1 cup fresh or frozen berries of choice
  • ¼ cup maple syrup
  • ¼ cup coconut flakes (finely shredded)
  • ½ cup coconut flakes (for topping)
  1. In food processor, pulse oats, peanut butter and chia seeds.
  2. Add berries, maple syrup and coconut flakes. Pulse to combine.
  3. Using spoon, scoop out 1 tablespoon mixture. Using hands, roll into ball. Repeat until all mixture is used.
  4. Finish by rolling each ball in coconut flakes.
  5. Store in refrigerator.
