In a medium saucepan, bring 2 cups water to a boil. Add 1 cup oats, reduce heat to a simmer and cook for 3-6 minutes, depending on desired consistency, stirring occasionally. Serves 2.

Made with oats, coconut water, coconut cream and fresh lime, it’s tart and creamy like Key lime pie but with the all the nutrition benefits you want.
Key Lime Pie Overnight Oats (Vegan)
- 2-½ cups rolled oats
- 1 container (17.5 oz. ) coconut water with lime
- 1 cup coconut cream
- 3 Tbsp. maple syrup
- 1 large Key lime or regular lime (juice and zest)
- 1 Tbsp. vanilla extract
- ¼ tsp. salt
- In medium bowl, mix together all ingredients.
Divide evenly into eight jars or containers.
- Refrigerate overnight.
