Ingredients
Apple Muffins
- 2 cups organic apples diced
- 2-1/2 cups gluten-free baking flour
- 1/2 cup sugar
- 2 organic eggs
- 1/2 cup vegan butter softened at room temperature
- 1/4 cup olive oil
- 1 Tbsp. vanilla extract
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 1/8 tsp. cardamom
- 1/4 tsp. nutmeg
- 1/4 tsp. ground ginger
- 1 tsp. cinnamon
Streusel Topping
- 2/3 cup gluten-free baking flour
- 1/2 cup brown sugar
- 1/4 cup vegan butter melted
- 1 tsp. cinnamon
Glaze
- 1/4 cup powdered sugar
- 1 Tbsp. almond milk
- 1/2 tsp. vanilla extract
Instructions
Apple Muffins

Preheat oven to 375 degrees F.

In medium bowl, mix flour, baking soda, baking powder, cardamom and cinnamon until all are incorporated.

Using large bowl and hand mixer, beat butter and sugar until creamy. Add eggs and beat until incorporated. While mixing, slowly add flour mixture until dough thickens and no dry flour is left.

Fold apples into dough.

Fill muffin pan with liners, and fill muffin cups 3/4 with dough. Set aside.
Streusel Topping

In small bowl, mix flour, sugar and cinnamon. Add melted butter and mix in until all flour is wet.

Add streusel topping to each muffin cup.

Bake muffins 15 to 20 minutes or until top is golden brown and toothpick comes out clean.
Glaze

In small bowl, mix powdered sugar, vanilla and milk. Drizzle glaze over warm muffins.

Serve muffins warm or at room temperature. Store in airtight container in fridge or freeze for up to a month.
