Directions

Stovetop Cooking Directions

Add 1 cup Bluebird Emmer Farrot to 4 cups of water or stock, and a pinch of salt. Boil on high for 5 minutes, stirring frequently. Cover and simmer for 50-60 minutes until berries are plump and chewy. Drain excess liquid. Prepare hot or cold. One cup makes 3-4 servings.

 

Serve Hot!

Crisp cooked farro in olive oil, with onions & fresh herbs. Or make a quick risotto - sauté cooked farro with shallots & thyme & finish with mascarpone.

 

Serve Cold!

Toss with seasonal greens, dried fruit, toasted nuts & feta. Or combine with tomatoes, basil, mozzarella, shallots & olive oil - caprese style!

Chickpea, Barley & Pomegranate Picnic Salad

This easy, light and nutritious salad gives you energy and zing to help you keep up with all manner of things. Mix protein-filled chickpeas and barley with juicy pomegranate seeds, crunchy cukes and bright herbs. Toss it with a tangy lemon vinaigrette to keep it all lively, and you’ll feel fueled for anything. Pomegranate Salad with Chickpeas & Barley

Chickpea, Barley & Pomegranate Picnic Salad

  • 2 cups chickpeas
  • 2 cups cooked pearl barley (or farro)
  • 1 cup cucumbers (diced, peeled or unpeeled)
  • 2 cups pomegranate seeds
  • 2 Tbsp. parsley
  • 2 Tbsp. cilantro

Dressing

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 1 Tbsp. agave syrup
  • ? tsp. black pepper
  • ¼ tsp. pink salt
  1. In bowl, toss together chickpeas and barley. Stir in cucumber, pomegranate seeds and herbs.
  2. In small bowl, whisk together ingredients for dressing.
  3. Drizzle dressing over salad and toss to coat.
