Gluten- & Dairy-Free Animal Crackers

Originally created over 100 years ago, the slightly sweet cookie encourages animal recognition and pretend play. If your little one is sensitive to gluten or dairy, they don’t have to miss out. With the help of Bob’s Red Mill Gluten-Free 1-to-1 Baking Flour and a dairy-free butter alternative, this animal cracker recipe allows them to partake in the age-old tradition of animal cracker snack time. Gluten- & Dairy-Free Animal Crackers

Cookies

  • 1/4 cup egg whites
  • 4 Tbsp. butter substitute (cold)
  • 6 Tbsp. water (more if needed)
  • 2 cups Gluten-Free 1-to-1 Baking Flour
  • 1/4 cup cane sugar
  • 1/4 tsp. baking powder
  • 1/2 tsp. nutmeg
  • 1/4 tsp. salt

Glaze

  • 1 cup powdered sugar
  • 1 Tbsp. water (divided)
  • Sprinkles

Cookies

  1. Preheat oven to 350 degrees F and prepare cookie sheet with parchment paper.
  2. In food processor, pulse dry ingredients three times to combine. Add butter and pulse to form a coarse meal.
  3. Add wet ingredients to mixture and blend to combine. If moisture is needed to bring dough together, add 1 tablespoon water at a time. (Note: This should be a smooth dough, not super sticky.)
  4. Form dough into a square and wrap it tightly in plastic wrap. Freeze 15 minutes.
  5. Remove dough from freezer and unwrap. Using another sheet of plastic wrap, cover dough and roll ? to ¼ inch thick.
  6. Using animal shaped cookie cutters, cut dough into cookies. Place cookie shapes on prepared cookie sheet and freeze 15–45 minutes.
  7. Bake 15–20 minutes or until golden brown, rotating pan halfway through baking. Allow cookies to cool 5 minutes before removing from pan, then place on cooling rack to cool completely.

Glaze

  1. In a small bowl, combine powdered sugar and 1 teaspoon water. Mix well, adding ¼ teaspoon water at a time to form a thick icing.
  2. Dip cookies face down in icing and add sprinkles if desired. Before storing, allow icing to dry fully. Can be stored in an airtight container.
