Orzo, meaning “barley” in Italian, is a tiny cut of pasta best known for its feature in homemade soups. Though it is small in size, Orzo pasta is more than just a soup cut, or pastina. Try it in everything from cheesy baked side dishes to orzo pasta salads.
DeLallo Organic Whole-Wheat Pasta begins with a high-quality blend of Italian organic durum wheat. Wheat is chosen for its beautiful color, wonderful aroma and high protein content. All of these characteristics create a pasta with ideal appearance, flavor and al dente texture when cooked. This wheat is ground into whole-wheat flour, then kneaded with mineral-rich mountain spring water for everything you love about traditional pasta, but with the benefits of whole grains. Pasta is extruded with bronze dies for a rough surface texture perfect for capturing sauces. True to tradition, we dry pasta slowly at low temperatures to retain the pasta’s taste, texture and aroma.
Directions
- Bring 5 quarts of water to a rolling boil. Once boiling, add 2 tbsp. of sea salt.
- Add pasta and cook for 8 minutes, stirring occasionally. For firm al dente pasta vary cooking time for desired consistency.
- Drain immediately and serve with your favorite DeLallo organic pasta sauce.
Pasta by the pound: For every 1 lb. of pasta, use 5 qts. of water and 2 tbsp of sea salt.

Meatball Orzo Casserole
Meatballs
- 1 lb. ground beef
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/2 tsp. Italian seasoning
- 1 Tbsp. ground flaxseed
- 2 Tbsp. water
- 1/4 cup minced broccoli florets
Casserole
- 13 oz. light coconut milk
- 2 Tbsp. nutritional yeast
- 1/4 cup finely grated parmesan (or dairy-free parmesan)
- 1 garlic clove (minced)
- 8 oz. orzo pasta
- 1-1/2 cups broccoli florets (fully thawed if frozen)
- 1 cup shredded cheese (or dairy-free cheese)
- Preheat oven to 350 degrees F.
- In mixing bowl, combine all ingredients for meatballs.
- Onto baking sheet, arrange 1 tablespoon scoops of meatball mixture. Bake 20 minutes.
- In pot, cook orzo al dente, per package instructions.
- In mixing bowl, whisk together coconut milk, nutritional yeast, grated parmesan and minced garlic until well combined.
- To 9x13-inch baking pan, add orzo, broccoli florets and cream sauce. Add cooked meatballs and stir. Top with shredded cheese.
- Set oven temperature to 450 degrees F.
- Bake casserole 10 minutes until cheese is melted and bubbly. Serve warm.
