Broccoli Slaw With Homemade Dressing

Crisp, chopped broccoli mingle with sweet, julienned carrots, thinly sliced purple cabbage and lacinato kale. The slaw is brought to life with roasted pistachios and tangy cranberries. It's a symphony of textures and flavors that will make your taste buds sing, proving that eating your greens can be truly delicious.
Broccoli Slaw With Homemade Dressing
Salad
- 3-4 cups cooked broccoli (chopped)
- 2 carrots (julienned)
- 1/2 cup purple cabbage (thinly sliced)
- 1/2 purple onion (julienned)
- 1 leaf lacinato kale (thinly sliced)
- 1/2 cup pistachios (roasted, salted & crushed)
- 1/2 cup dried cranberries (soaked for 5 minutes)
- 1/2 celery stalk (minced)
Dressing
- 3 Tbsp. avocado mayonnaise
- 2 Tbsp. extra virgin olive oil
- 2 Tbsp. roasted pistachio oil
- 2 Tbsp. apple cider vinegar
- 1-2 Tbsp. Greek yogurt (vegan)
- 1 tsp. Himalayan pink salt
- 1 tsp. black pepper
- 2 tsp. maple syrup
- 1/2 celery stalk (minced)
- In large bowl, combine prepared salad ingredients.
- In a medium bowl, add dressing ingredients. Whisk until creamy. Adjust flavors to your liking.
- Drizzle dressing on veggies, toss and coat.
- Serve as-is or chill and serve later.
