Gluten-Free Apple Streusel Muffins

Nothing says fall like fresh apples and warm spices. These gluten-free apple muffins are soft and moist, topped with cinnamon streusel crumbs and drizzled with a delicious vanilla glaze. Breakfast, snack or dessert, you’ll find it’s convenient to grab these handheld treats any time of day. One batch makes 16 muffins! Eat them warm out of the oven or freeze them for grab-and-go mornings. A Muffin Pan is Filled With Gluten-Free Apple Muffins Topped With Streusel and Vanilla Glaze.

Gluten-Free Apple Streusel Muffins

Apple Muffins

  • 2 cups organic apples (diced)
  • 2-1/2 cups gluten-free baking flour
  • 1/2 cup sugar
  • 2 organic eggs
  • 1/2 cup vegan butter (softened at room temperature)
  • 1/4 cup olive oil
  • 1 Tbsp. vanilla extract
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/8 tsp. cardamom
  • 1/4 tsp. nutmeg
  • 1/4 tsp. ground ginger
  • 1 tsp. cinnamon

Streusel Topping

  • 2/3 cup gluten-free baking flour
  • 1/2 cup brown sugar
  • 1/4 cup vegan butter (melted)
  • 1 tsp. cinnamon

Glaze

  • 1/4 cup powdered sugar
  • 1 Tbsp. almond milk
  • 1/2 tsp. vanilla extract

Apple Muffins

  1. Preheat oven to 375 degrees F.
  2. In medium bowl, mix flour, baking soda, baking powder, cardamom and cinnamon until all are incorporated.
  3. Using large bowl and hand mixer, beat butter and sugar until creamy. Add eggs and beat until incorporated. While mixing, slowly add flour mixture until dough thickens and no dry flour is left.
  4. Fold apples into dough.
  5. Fill muffin pan with liners, and fill muffin cups 3/4 with dough. Set aside.

Streusel Topping

  1. In small bowl, mix flour, sugar and cinnamon. Add melted butter and mix in until all flour is wet.
  2. Add streusel topping to each muffin cup.
  3. Bake muffins 15 to 20 minutes or until top is golden brown and toothpick comes out clean.

Glaze

  1. In small bowl, mix powdered sugar, vanilla and milk. Drizzle glaze over warm muffins.
  2. Serve muffins warm or at room temperature. Store in airtight container in fridge or freeze for up to a month.
