Slow Cooker Chicken Chili With Squash & Pumpkin
- 1 lb. ground chicken
- 1 large parsnip (peeled, core removed, chopped)
- 1/2 lb. butternut squash (peeled and chopped)
- 1 can (15 oz.) cannellini beans
- 1 cup canned pure pumpkin
- 1/2 tsp. chili powder
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1 tsp. oregano
- Fresh parsley (for garnish)
Optional:
- 1/4 tsp. ground cinnamon
- Pinch ground cloves
- In skillet, cook ground chicken until browned.
- In slow cooker, add chicken, parsnip and squash and all remaining ingredients and stir to combine.
- Cook on high 5-6 hours, or on low 7-8 hours.
- Serve topped with fresh parsley.
