Gopal's Cashew Butter is a sweet and tasty, highly nutritious superfood snack. Cashews are used traditionally in many cultures for making curries and sweet cuisines. Blended cashews are considered one of the most valuable vegan ingredients for any dish as a rich, velvety cheese alternative. Each batch is handmade with love on our ahimsa community farm. To keep our butter raw, the cashews are dried and round at low temperatures. The result is a smooth and creamy cashew butter that is easy to spread.

Soft-Baked Cashew Butter Cookies
Perfect for when you want a bite of something sweet, rich and nutty, these cashew butter cookies are soft, just sweet enough, and ready in 20 minutes. What’s more, they’re free from dairy, gluten, oil and refined sugar – and they provide a punch of protein! Cashew butter has its own beautifully unique flavor and deserves a place on your roster of ingredients for healthier baked goods.
Soft-Baked Cashew Butter Cookies
- 1 cup Bob’s Red Mill Paleo Flour
- 1/2 tsp. baking soda
- 1/4 tsp. ground cinnamon
- 3/4 cup coconut sugar (or date sugar)
- 1/2 cup Bob’s Red Mill Old-Fashioned Rolled Oats
- 1/2 cup raw cashews (chopped)
- 2/3 cup cashew butter
- 3/4 tsp. vanilla extract
- 2 pasture-raised eggs
- 4 Bhu Keto Bites - White Chocolate Macadamia Cookie Dough
- Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
- In mixing bowl, combine all ingredients except Bhu bites and mix until well combined.
- Add Bhu bites and use hands to blend into dough.
- Scoop approximately 1 tablespoon of dough per cookie and arrange on baking sheet.
- Bake 10 minutes until lightly browned.
