Zucchini Pizza Bites
Craving pizza but don’t want to feel weighed down by the excess carbs? Skip the bread-based crust and use wholesome veggies as your base instead. Zucchini rounds serve as the perfect foundation for the cheesy goodness that sits on top, and it adds some greens to the meal. It’s a win-win kind of dish.

Ingredients
2 zucchinis
2/3 cup mozzarella cheese, shredded
2 oz. mini pepperoni rounds
Sauce
4 oz. tomato paste
4 oz. tomato sauce
1 tsp. salt
1 tsp. dried oregano
1/2 tsp. garlic powder
1/2 tsp. black pepper

Directions
- Preheat oven to 375° F.
- In bowl, combine sauce ingredients.
- Slice zucchini into 1/4 inch rounds and arrange on baking sheet.
- Spoon sauce in layer onto each round, then top evenly with mozzarella and pepperoni.
- Bake 12-15 minutes, until cheese is melted and zucchini is softened.
