Simple Cabbage Salad
When a head of cabbage is sliced thin and dressed just right, it’s a delight to the senses. Crunchy, zesty and filling, the star of this easy cabbage salad recipe is the amazing dressing. Soy sauce, honey, rice vinegar, Dijon mustard and lemon juice are whisked together with olive oil for an absolutely scrumptious dressing to any salad. It offers depth of flavor and hits all the right sweet and savory notes. The beauty of this recipe is its room for flexibility. Incorporate any leftover produce in with the cabbage for more color, flavor and variety.
Simple Cabbage Salad
- 1 head green cabbage
- 1/2 bunch fresh parsley
- 2 Tbsp. sesame seeds
Dressing
- 1/4 cup olive oil
- 2 tsp. soy sauce
- 1 Tbsp. honey
- 2 Tbsp. rice vinegar
- 1 Tbsp. dijon mustard
- 1/2 tsp. black pepper
- 1/2 tsp. salt
- Juice from 1/2 lemon
- In small bowl, whisk together dressing ingredients and set aside.
- Slice cabbage head into thin strips and add to large bowl.
- Chop parsley and toss with cabbage.
- Stir dressing into cabbage and coat evenly.
- Serve topped with sesame seeds.
- If you have leftover vegetables in your produce drawer, add them to this salad. You can add thinly slice bell pepper, shredded carrot, green onions or cucumber as ideas.
