Peanut Butter Granola Bars
When you pick your kids up from school, the first thing they're likely to say is, “I’m hungry.” Rather than hear complaints and the rumble of empty tummies on your drive home, you pass them a snack bar. The little ones might frown. A bar? Where are the potato chips or sugar-frosted crackers? They take a bite and instantly those frowns turn into smiles. With tasty white chocolate peanut butter and bursts of raisins, kids liken these snacks to candy. But you know the truth: you’re feeding them wholesome oats, seeds of superfoods and organic agave as sweetener. If only all your back-to-school shopping was as easy as making these bars. Score: you 1, cranky kiddos 0.

Peanut Butter Granola Bars
Makes 16-18 bars
Ingredients
3 cups rolled oats
1/3 cup almond flour
¼ cup Thompson raisins & golden raisins
1-½ Tbsp. superseed blend with flax, chia & hemp
1 cup white chocolate peanut butter, slightly melted
½ cup organic agave (can sub maple syrup or honey)

Directions
- In a large mixing bowl, mix all ingredients until fully incorporated.
- Grease a 9 x 13-inch glass baking pan (or smaller) with coconut oil. Pour mixture into pan.
- Freeze for at least 4-5 hours or overnight.
Margaret’s notes: These bars are pretty crumbly. Keep them chilled to help them stay together. If you’re sending them in a lunchbox, be sure to include an ice pack.
