Cooking and Enjoyment

Riso di Molinella Arboria Rice is a traditional, short-grain rice. It has higher protein and starch content than other rice, which is why it plumps up during cooking. The external layer cooks more, while the kernel - rich in starch - remains firm. After about 20 minutes cooking on the stovetop, the result is a sticky and creamy texture that defines the perfect "al dente" risotto. It is also recommended for flans and "mantecato" (creamy) rice dishes, including rice pudding.

Vegan Risotto With Butternut Squash

  • 3 Tbsp. olive oil (divided)
  • 1 small yellow onion (chopped)
  • 4 garlic cloves (roughly chopped)
  • 1 cup arborio rice
  • 2 cups butternut squash (cubed)
  • 2-3 cups kale (chopped)
  • 1/4 cup white wine
  • 4-5 cups vegetable stock
  • 1/2 tsp. sea salt
  • 1/4 tsp. white pepper
  • Handful pumpkin seeds
  1. Preheat oven to 400 degrees F.
  2. In bowl, toss squash with olive oil, salt and pepper.
  3. Transfer squash to baking sheet; bake 25 minutes.
  4. In large saucepan over medium heat, combine olive, garlic and onion. Cook until translucent.
  5. Add rice and sauté 1 minute, stirring occasionally.
  6. Add wine and cook until evaporated.
  7. Reduce to low heat and add 1 cup of vegetable stock. Let simmer 25 minutes, stirring occasionally. Continue adding vegetable stock until broth has been absorbed by rice.
  8. Stir in 3/4 of roasted butternut squash.
