Known for its long, tubular shape, bucatini pasta brings an elevated element to any dish where pasta is the centerpiece. Montebello version is made using durum wheat semolina organically grown on a small cooperative of family farms in the rolling hills overlooking the Adriatic Sea. With an empty center that allows sauce to coat both inside and out, it takes well to all kinds of recipes, including bucatini carbonara, cacio e pepe and all’amatriciana.
1. Add 4 quarts water and 1-1/2 Tbsp salt per pound of pasta to a large pot.
2. Bring to a boil and add pasta, stirring immediately to prevent clumping
3. Cook for 8-10 minutes. Drain, sauce, and serve.
