These Mochaccino Cookies are a happy in-between and the perfect balance of chocolate flavor with a pop of coffee. Overall, it's a match made in cookie heaven!

You will need:
1/3 cup oil or shortening
1/4 cup hot water
1. Heat oven to 350°F. Lightly spray a cookie sheet or line with parchment paper.
2. Combine wet ingredients with dry mix until well blended.
3. Form dough into balls about 1 1/2" in diameter to make 12 to 16 cookies.
4. Place on cookie sheet and press slightly down with the back of a fork.
5. Bake for 12-15 minutes until cookies start to crack on top.
Variations: Try adding 1/2 cup semi-sweet, butterscotch or white chocolate chips, chopped macadamia nuts, or even shredded coconut for a chunky, chewy treat!
For Thicker Cookies, chill dough on cookie sheet for 15 minutes before baking.
