Vegan White Mac and Cheese

  • 1 box Explore Cuisine chickpea fusilli
  • 1-1/2 cups Sproud Original plant-based milk
  • 2 Tbsp. Vegan butter
  • 3 Tbsp. cashew cream cheese
  • 1-½ cups vegan cheese
  • 1/3 tsp. garlic salt
  • 2 Tbsp. Bob’s Red Mill arrowroot powder
  1. Preheat oven to 400 degrees F.
  2. Cook pasta according to package directions, cooking for 7 minutes rather than 9-11. Drain and set aside.
  3. In 8” square baking dish, combine 1 cup vegan cheese and remaining ingredients. Stir until well combined.
  4. Stir in cooked pasta; top with remaining vegan cheese.
  5. Bake 15-20 minutes.
