Lemongrass Meatballs With Shirataki Noodles

Well, yes, they all include a noodle, but more importantly, they’re quintessential comfort foods. Noodles universally represent a cozy hug, and no matter your health goals or diet restrictions, you deserve the oversized sweater that is noodles.
The Miracle Noodle brand makes shirataki noodles that are silky and satisfyingly filling. Better yet, they’re grain free, low carb and (extremely) low calorie. There’s no sketchy food science here. The noodles are made with one main ingredient – the Japanese konjac plant – resulting in a pasta that’s 97% water and 3% fiber. So if you want a noodle-y, Asian-inspired dish that’s rich with umami flavors
and is keto friendly, give this shirataki noodles recipe a try. You deserve to slurp up angel hair noodles smothered in sauce!
Lemongrass Meatballs With Shirataki Noodles
Pasta & Sauce
- 2 packs Miracle Noodle Angel Hair Noodles (rinsed)
- 2 tsp. ginger (grated)
- 1 clove garlic (minced)
- 1 Tbsp. Thai chili garlic sauce
- 1 Tbsp. coconut aminos
- 2 cups chicken broth
- 1 tsp. fish sauce
- 1 cup water
- 2 Tbsp. lime juice
Optional: scallions, basil and cilantro for garnish
Meatballs
- 1 lb. ground chicken
- 1/4 cup onion (grated)
- 1 tsp. lemongrass (minced)
- 1 Tbsp. Thai chili garlic sauce
- 1 Tbsp. coconut aminos
- 1 tsp. fish sauce
- 1/4 tsp. salt
- Preheat oven to 425 degrees F and prepare a baking sheet with foil and nonstick spray.
- To prepare pasta and sauce, place large skillet on low-medium heat. Cook garlic and ginger for 3 minutes.
- Add coconut aminos, Thai chili garlic sauce, fish sauce, broth and water and bring to boil.
- Allow mixture to reduce for 8 minutes.
- Add noodles and let cook while meatballs are prepared.
- To prepare meatballs, combine chicken, onion, lemongrass, Thai chili garlic sauce, aminos, fish sauce and salt in large bowl.
- Roll into 1.25-inch balls and place on prepared baking sheet.
- Bake 12-15 minutes or until internal temperature reaches 165 degrees F.
- Stir lime juice into noodle mixture and turn off heat.
- Prepare dish with noodles and sauce, meatballs and desired garnishes.
