Chocolate Raspberry Mousse (Vegan)

When the chocolate craving comes on, look to this vegan mousse for the cure. You’ll dive head first into a rich, intensely chocolatey dessert, so be prepared for depth of flavor! This recipe uses chocolate in many forms, including powder, chips, even in its most intense 100% variety. The vegan cream of choice is coconut cream, and added to that is vanilla for creamy texture and flavor. Top the finished mousse with raspberries for a hit of tartness to contrast the richness. A Small Bowl is Filled With Chocolate Vegan Mousse, Sitting on a Bright Red Platter and Surrounded by Squares of Chocolate, Raspberries and Mint Sprigs.

Chocolate Raspberry Mousse

  • 2 cans coconut cream
  • 1 Tbsp. vanilla
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup 100% chocolate
  • 1/4 cup dark chocolate chips
  • 1 cup raspberries
  1. In small sauce pan over medium heat, pour one can of coconut cream and heat until bubbles form around the edges. Stir in cocoa powder, vanilla and chocolate. Add berries and stir into a thick consistency.
  2. In separate bowl, whip other can of coconut cream. Pour hot chocolate mixture into the whipped cream and fold well.
  3. Pour into small ramekins or dessert bowls with a spatula. Chill up to two hours.
  4. Serve with a dollop of whipped cream and fresh berries.
