White Chocolate-Topped Apricot Oat Bars

Dried apricots, oats and shredded coconut are the star ingredients in these chewy bars. The tartness of apricot combines beautifully with the delicate sweetness of a layer of melted white chocolate on top. White Chocolate-Topped Apricot Oat Bars

Bars

  • 1 cup quick oats
  • ½ cup dried apricots (chopped)
  • 1 very ripe banana (mashed)
  • ? tsp. pink salt
  • 1 Tbsp. Bob’s Red Mill egg replacer
  • 2 Tbsp. water
  • ¼ cup unsweetened dairy-free milk
  • ¼ cup finely shredded coconut
  • 2 Tbsp. coconut oil

Topping

  • 1 cup white chocolate chips
  • 2 tsp. olive oil
  1. Preheat oven to 350 degrees F.
  2. Line 7x11 baking pan with parchment paper.
  3. In small bowl, mix 1 Tbsp. egg replacer with 2 Tbsp. water and let thicken for 1 minute.
  4. Mix together all bar ingredients, spoon into baking pan and smooth out.
  5. Bake 20 minutes.
  6. In double boiler, melt white chocolate with olive oil over medium heat for 5 minutes.
  7. Pour melted chocolate over apricot bars.
  8. Chill 30 minutes to one hour until chocolate is set. Cut into 12 bars.
