Gluten-Free Mini Calzones

Made with Simple Mills Almond Flour Pizza Dough Mix, the crusts are delightfully tender with a subtle herby flavor. Customize the filling to your taste—classic pepperoni and mozzarella, or dairy-free and veggie-packed. They're perfect as appetizers, lunchbox treats or an easy dinner that everyone will love. Bonus: no one will guess how simple they are to make.
Gluten-Free Mini Calzones
Dough
- 1/3 cup water
- 2 Tbsp. olive oil
- 2 Tbsp. apple cider vinegar
- 1 pkg. Simple Mills Almond Flour Pizza Dough Mix
Optional
Filling
- 1/2 cup pizza sauce (or marinara)
- 1/3 cup pepperoni (or vegan meat alternative)
- 1/2 cup mozzarella (or dairy-free mozzarella, diced)
- Preheat oven to 400 degrees F.
- In mixing bowl, mix together all dough ingredients until large ball of dough forms.
- On flat, lightly floured work surface, roll out dough using rolling pin until about ¼-inch thick.
Using roughly 6-inch circular cookie cutter or lid of container, cut out about 8 circles of dough and arrange on sheet pan.
- Spoon about 1 tablespoon pizza sauce or marinara on lower half of each circular piece of dough, place pepperoni on top and sprinkle with mozzarella pieces.
- Fold upper half of circle over lower half, brush with egg wash, if desired, and seal edges with tines of fork.
- Bake about 12 minutes, until golden brown and cooked through.
