Soft-Baked Cashew Butter Cookies

  • 1 cup Bob’s Red Mill Paleo Flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. ground cinnamon
  • 3/4 cup coconut sugar (or date sugar)
  • 1/2 cup Bob’s Red Mill Old-Fashioned Rolled Oats
  • 1/2 cup raw cashews (chopped)
  • 2/3 cup cashew butter
  • 3/4 tsp. vanilla extract
  • 2 pasture-raised eggs
  • 4 Bhu Keto Bites - White Chocolate Macadamia Cookie Dough
  1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
  2. In mixing bowl, combine all ingredients except Bhu bites and mix until well combined.
  3. Add Bhu bites and use hands to blend into dough.
  4. Scoop approximately 1 tablespoon of dough per cookie and arrange on baking sheet.
  5. Bake 10 minutes until lightly browned.
