Upcycled Oat Chocolate Chip Cookies

America's favorite cookie made even batter with a hint of oaty goodness. Crispy edges, soft chewy centers, and notes of butterscotch, brown sugar, and vanilla.

Directions

Makes 20 cookies

 

What You'll Need:

Vegetable Oil 1/3 cup

Water 1/2 cup + 1 Tbsp

 

Heat oven to 375°F, or 350°F if using a dark or nonsitck cookie sheet.

Pour the entire bag of chocolate chip cookie mix into a large bowl.

Add oil and water. Mix until all of the dry ingredients are moistened and form thick batter. Continue to mix and mash for an additional 60 seconds.

Drop rounded tablespoons of batter 2 inches apart on a greased cookie sheet. Flatten each spoonful of batter slightly.

Bake 12-15 minutes in the center of the oven, until cookies are brown on the edges. Rotate the cookie sheet halfway through the baking time.

Cool cookies for 30 seconds on cookie sheet before removing. Allow the cookie sheet to cool completely between batches.

Chocolate Chip Cookie Sticks

If you love chocolate chip cookies, you’re going to love them even more in stick form! Why? They’re easier to make – and greater fun to eat. Simply mix together the ingredients, spread the dough in a dish, bake and cut (with a pizza cutter!) into dippable sticks. The next part is easy-peasy: dip or dunk sticks in melted chocolate for extra tastiness – and enjoy! Chocolate Chip Cookie Sticks

Cookies:

  • 1 cup butter (softened)
  • 1 cup brown sugar (packed)
  • 2/3 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 cup bread flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 2/3 cup chocolate chips

Chocolate dip:

  • 1/2 cup dark chocolate chips
  • 1 tsp. coconut oil
  1. Preheat oven to 350 degrees F. Prepare 9-inch square baking pan with parchment paper.
  2. In bowl, use electric mixer to mix butter and sugars. Mix in eggs and vanilla.
  3. Mix in flours, baking soda, baking powder and salt.
  4. Stir in chocolate chips.
  5. Spread cookie dough evenly into baking pan (to about ¼-inch thickness).
  6. Bake 15-17 minutes, or until middle of cookie is lightly browned.
  7. For dip, combine chocolate chips and coconut oil in microwave-safe bowl. Microwave 45 seconds. Stir and heat again until melted.
  8. Once cookies are cooled, use pizza cutter to slice into ‘sticks.’
  9. Dip end of each stick in melted chocolate; let solidify before serving.
