Homemade Gluten-Free Matzo & Passover Charcuterie
Be inclusive of your
gluten-sensitive Passover guests by baking this super simple gluten-free matzo. Mix oat flour, salt and water, and bake the flat, fork-pierced dough for 10 to 13 minutes. The result is a crispy, cracker canvas perfect for dips and spreads. Go the extra mile by building a beautiful charcuterie platter complete with hummus,
olives,
dried fruits,
nuts and cheese. Make the board extra festive with traditional dips like charoset (minced apples, nuts, cinnamon and wine), ground horseradish, and maybe even (mock) chopped liver. Passover is full of food customs. Make the Seder fun for all!
Homemade Gluten-Free Matzo & Passover Charcuterie
- 1 cup 120 g gluten-free oat flour
- 1/2 tsp. Celtic salt
- 1/4 cup water (plus 2-3 Tbsp. if needed)
- Preheat oven to 500 degrees F. Line a large sheet pan with parchment paper, and cut another piece the same size. Have rolling pin ready.
- In mixing bowl, combine flour and salt.
- Set timer to 18 minutes, then pour 1/4 cup water into flour mixture and stir, adding more water only if needed to make dough workable. (Note: Place dough in oven within 18 minutes of mixing to follow traditional method.)
- Place dough on parchment paper, cover with second piece of parchment and roll to 1/8-inch thickness.
- Remove second parchment paper and use fork to poke dough all over.
- Score into 12 pieces, then bake 10-13 minutes or until matzo is crisp and slightly browned on edges.
