Beet & Roasted Garlic Hummus
- 2 medium beets (cooked & peeled)
- 5 garlic cloves (unpeeled)
- 1 15-oz. can chickpeas (drained & rinsed)
- 2 Tbsp. extra virgin olive oil (or aquafaba)
- 2 Tbsp. tahini
- 2 Tsbp. lemon juice
- 3/4 tsp. salt
- Black pepper (to taste)
- Black and white sesame seeds (for garnish)
- Fresh parsley (for garnish)

- Preheat oven to 400 degrees F. Line baking sheet with parchment paper.
- On prepared baking sheet, arrange unpeeled garlic cloves evenly and bake for 20 minutes.
- Unpeel garlic cloves and transfer to food processor or blender. Add beets, chickpeas, lemon juice, tahini, olive oil (or aquafaba) and salt. Process until smooth. Season with pepper to taste.
