Air Fryer Roasted Veggies
[vc_row][vc_column][vc_column_text]These air fryer roasted veggies are a vibrant side dish that's ready in under 20 minutes. Combining sweet potatoes, cauliflower, Brussels sprouts and red onions, this recipe offers a colorful medley of fall flavors and textures. A simple balsamic glaze coats the vegetables, while rosemary and garlic powder add a touch of aromatic depth. Topped with crunchy roasted cashews and sweet pomegranate seeds, these air-fried veggies are a delicious and satisfying addition to any fall meal.
Air Fryer Roasted Veggies
- 1 medium-sized sweet potato (cut into chunks)
- 2 cups cauliflower florets
- 8 Brussels sprouts (halved)
- 1 large red onion peeled (quartered, and separated)
- 2 Tbsp. vegetable oil
- 2 Tbsp. balsamic vinegar
- 1 tsp. salt
- 1 tsp. garlic powder
- 1 tsp. dried rosemary
- 1 tsp. black pepper
- 1/4 cup roasted and salted cashews for garnish
- 1/4 cup pomegranate seeds for garnish
- Preheat air fryer to 375 degrees F or 190 degrees C.
- In large bowl, combine sweet potatoes, cauliflower, Brussels sprouts and red onion.
- Drizzle oil and balsamic vinegar over vegetables. Add salt, garlic powder, rosemary and black pepper. Toss until vegetables are evenly coated with oil and seasoning.
- Spread vegetables in single layer in air fryer basket to ensure even cooking. You may need to work in batches.
- Cook 15-20 minutes, shaking basket halfway through to ensure they cook evenly. Vegetables should be tender and lightly caramelized. If needed, air fry an additional 3-5 minutes for extra crispiness.
- Once done, transfer roasted vegetables to a serving plate.
- Garnish with roasted cashews and pomegranate seeds before serving.
