Sheet Pan Triple Apple Crisp

Similar to a traditional apple crisp but with a few healthy swaps, this simple sheet pan version might just be your new favorite dessert. Three types of apples are coated in a naturally sweetened, apple pie filling-like sauce and covered in a layer of golden, cinnamon-sugar spiced crumb topping. The oats and pecans add fun dimension and flavor that perfectly complement the tender apples. Sheet Pan Triple Apple Crisp

  • 6-7 cups sliced Gala, Granny Smith & Honeycrisp apples (about 2 of each type)
  • 3 Tbsp. pure maple syrup
  • 1/2 cup coconut milk ( or cream)
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground ginger
  • 1/8 tsp. allspice

Topping:

  • 1/3 cup gluten-free all-purpose flour
  • 1/2 cup pecans (roughly chopped)
  • 1/2 cup gluten-free rolled oats
  • 1/4 cup organic brown sugar
  • 3-4 Tbsp. vegan butter (melted)
  • 1-1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground ginger
  1. Preheat oven to 375 degrees F. Line large baking sheet with parchment paper; set aside.
  2. In large bowl, mix together coconut cream, maple syrup and spices. Toss in sliced apples, coating generously.
  3. In separate bowl, combine flour, pecans, brown sugar, oats, vegan butter and topping spices. Stir together until mixture looks crumbly and slightly chunky.
  4. Spoon apples onto baking sheet. Top with topping mixture. Bake 40 to 45 minutes or until apples become bubbly and topping is golden brown.
  5. Remove from oven and let cool 5 minutes or so. Serve warm.
