Ginger is in the same family as turmeric and cardamom and possesses a similar fragrant, earthy and spicy flavor. Ground Ginger is incredibly versatile and is used in both sweet and savory preparations in cuisines all over the world. Dried ginger can be used in teas, soups and to marinate meat. It can easily overpower a dish and blends well with warming spices such as nutmeg and cinnamon.
Add 1/2 teaspoon ground ginger to 2 cups fruit in a pie or a smoothie.

Gingerbread Cheesecake Parfaits
The warming spices in this whipped cheesecake parfait sing of Christmas. Mix it up with traditional dairy or with vegan cream cheese and coconut cream for a healthy dessert that feels decadent. The crunch of the almond crumble with bits of crushed and slivered nuts makes for a perfect and enchanting holiday dessert.
Gingerbread Cheesecake Parfaits
Cheesecake
- 8 oz. vegan cream cheese (or traditional cream cheese)
- ½ cup coconut cream
- 1 Tbsp. golden monk fruit
- 1 Tbsp. powdered monk fruit
- 1 tsp. ground ginger
- 3 tsp. cinnamon
- 1/4 tsp. ground cloves
- 1 Tbsp. vanilla
Crumble
- 1-1/2 Tbsp. vegan cream cheese (or traditional cream cheese)
- 1 tsp. vanilla
- 1/4 cup almond meal
- 1 tsp. golden monk fruit
- 1/8 tsp. ground ginger
Toppings
- Coconut whipping cream (whipped, or heavy whipping cream, whipped)
- Toasted slivered almonds
- Chopped pecans
- In bowl, beat together cream cheese, coconut cream, monk fruit, spices and vanilla.
- Refrigerate 25-35 minutes.
- In small bowl, mix together cream cheese and vanilla for crumble layer.
- Slowly add almond meal, monk fruit and ginger until crumbly in texture.
- Transfer chilled cheesecake mixture into small glasses, bowls or jars. Sprinkle on crumble layer, pecans and almonds. Add dollop of whipped cream.
