Dairy-Free Aquafaba Whipped Cream
If your initial thought was “what the heck is aquafaba?”—let’s start there. This silly-sounding word is the name for the cooking liquid of beans and legumes, such as chickpeas (it’s the viscous water found in the can).
Whatever you do, don’t drain this precious fluid! There are so many things you can use it for. While it’s most popularly used to make homemade hummus (learn how to make this tasty turmeric hummus recipe here), it can be used in sweets as well. This voluminous, aquafaba-based whipped cream is only 18 calories per batch making it a perfect topper for pies, fruit and ice cream.
6 Tbsp. aquafaba (1/2 the drained liquid from 1 can chickpeas)
1/3 cup Swerve confectioners erythritol
1 tsp. Vitacost organic vanilla
1/2 tsp. cream of tartar
1. In a small stand mixer bowl, combine all ingredients and stir to incorporate. Set bowl into place.
2. Start to whip on medium-high with whisk attachment and set timer for 10 minutes.
Additional cooking tip: If you don’t have a stand mixer, use a hand mixer or chill ingredients and mix together with a large whisk.
