A warmly spiced almond butter dough comes together in minutes, then gets topped with a silky, melt-in-your-mouth layer made from vegan white chocolate and Navitas Organics Cacao Butter Wafers. The cacao butter adds a rich, creamy finish that takes these gingerbread-flavored bars from everyday snack to something a little more special. With zero oven time and plenty of nostalgic cookie dough vibes, this vegan dessert is perfect for when you want an easy, better-for-you indulgence that still feels downright delicious.
Gingerbread No Bake Cookie Dough Bars
Wet
- 3/4 cup almond butter
- 1/4 cup brown sugar
- 1 Tbsp. ground flaxseed
- 3 Tbsp. water
- 1 tsp. vanilla extract
Dry
- 1 cup almond flour
- 1 tsp. cinnamon
- 1 tsp. ginger
- Pinch ground cloves
- Pinch salt
Toppings
- 3/4 cup vegan white chocolate chips
- 1/4 cup Navitas Organics Cacao Butter Wafers
- 1 tsp. vanilla extract
- Sprinkle of cinnamon
- In small bowl, mix flaxseed and water and let sit. This will make the flax egg.
- In medium bowl, mix wet ingredients until smooth. Add dry ingredients and stir until dough forms.
- Prepare loaf pan with parchment and press dough evenly into pan.
- Using double boiler, melt white chocolate chips and cacao butter wafers over low heat, stirring until smooth. Remove from heat and stir in vanilla.
- Pour mixture over dough and spread evenly with spatula. Top with cinnamon.
- Refrigerate 30 minutes, cut into bars and enjoy.
