Apple Butter Cake

This moist and tender loaf cake is bursting with the sweetness of apples and the rich, nutty flavor of almond flour. The swirls of apple butter add a touch of decadence, while the fragrant spices create a cozy and inviting aroma. Perfect for a weekend brunch or a cozy evening treat, this cake is sure to become a new family favorite. Two Apple Butter Cake Loaves Have Thinly Sliced Apples and Sit Beside Fresh Apple Slices.

Apple Butter Cake

Dry

  • 1-1/2 cups all-purpose flour
  • 1/3 cup super-fine almond flour
  • 1/4 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. ground nutmeg
  • 1 tsp. ground cinnamon
  • 1/4 tsp. cardamom
  • 1 tsp. Himalayan pink salt

Wet

  • 1/3 cup light brown sugar
  • 1 stick butter (room temperature)
  • 1 cup buttermilk (milk or plant-based milk)
  • 1/4 cup avocado oil
  • 1 tsp. vanilla extract
  • 2 eggs room temperature

Swirls

  • 1/2 cup apple butter spread
  • 1 apple (thinly sliced)

Optional: Sliced almonds

  1. Preheat oven to 375 degrees F and prepare two 8x4 loaf pans and line with parchment paper.
  2. In mixer, add wet ingredients, including butter, sugar and avocado oil. Cream until smooth.
  3. Add eggs, milk of choice and vanilla. Combine until light and fluffy.
  4. In medium bowl, sift dry ingredients.
  5. Pour dry ingredients into wet and gradually mix until well combined into a smooth batter.
  6. Pour batter into two prepared loaf pans. Dollop apple butter spread and gently swirl with a toothpick or knife. Top loaf cake with thinly sliced apples and optional sliced almonds.
  7. Bake 45-50 minutes, until center is set. Test with a toothpick. Cool 20 min before slicing.
  • To make homemade apple butter, peel and dice 3-5 apples and cook until tender with ?  cup brown sugar, 1 tsp. ghee, 1 wedge of lime, 2 tsp of spices & 1 tsp. of vanilla. Blend until smooth.
