Grilled Portobello Mushroom Burgers
Want a vegan burger that’s plant-based
and comes ready to grill? Enter the portobello mushroom burger! The large mushroom is filled with nature’s umami and fits perfectly in a hamburger bun. Add more umami flavor to the portobellos with a coconut aminos marinade, and grill for a touch of smokiness. Add to that a pile of plant-based toppings, such as grilled onions, arugula, tomato slices and avocado for a filling, delicious meal. Make it your own with different marinades and toppings. The possibilities are endless!
Grilled Portobello Mushroom Burgers
- 4 large portobello mushrooms
- 1 large red onion (cut in rings)
- 2 cups arugula
- 1 big red tomato (cut in 4 thick slices)
- 1 avocado (sliced)
- 3 Tbsp. coconut aminos
- 1 Tbsp. olive oil (for marinade)
- 1 Tbsp. olive oil (for the onion rings)
- 1/2 tsp. Himalayan pink salt
- 1/4 tsp. black pepper
- 4 hamburger buns
- In small bowl, whisk together coconut aminos, olive oil, salt and pepper for marinade.
- Brush portobellos with marinade and let sit at room temperature 20-30 minutes.
- Preheat outdoor grill at medium to high heat.
- Brush onion rings with oil and sprinkle with salt.
- Grill onion rings in single layer, flipping when grill marks form. Set aside.
- Grill portobellos stem side up 5 minutes or until grill marks appear. Flip and cook another 4-5 minutes.
- Grill buns 1 minute if desired.
- To prepare burgers, top buns with arugula, tomato slice, grilled onion, grilled portobello and avocado slices.
