Gluten-Free Red Velvet Cookies

Red velvet lovers rejoice! These soft, chewy (and easily portable!) cookies incorporate a great gluten-free flour so pleasing more partiers is possible. After mixing the better-for-you ingredients – including turbinado sugar, grass-fed ghee and organic cocoa powder – dollop the dough onto a baking sheet and place the cookies in the freezer for about an hour. Gluten-Free Red Velvet Cookies

  • 3/4 cup turbinado sugar
  • 1/4 cup melted grass-fed ghee (or butter)
  • 2 eggs
  • 1/4 tsp. red food coloring
  • 2 Tbsp. unsweetened cocoa powder
  • 1-1/2 cups gluten-free flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 1 tsp. vanilla
  1. In mixing bowl using hand mixer or stand mixer on medium speed, cream butter and for 1-2 minutes; add eggs and food coloring and mix until well combined.
  2. Add cocoa powder, flour, baking powder and salt and mix until dough is smooth.
  3. Onto parchment-lined baking sheet, scoop one tablespoon of dough at a time, arranging about 3 inches apart; place in freezer for one hour.
  4. Preheat oven to 350 degrees F. Remove cookies from freezer and bake from frozen for 10-12 minutes.

Note: Add sprinkle of powdered sugar and/or small white chocolate chips if desired.
