8 oz. light cream cheese, at room temperature
1/2 cup Greek yogurt
2 tsp. maple syrup
2 tsp. Dijon mustard
1/2 tsp. garlic salt, adjust to taste
1/4 tsp. ground black pepper
1/4 cup pistachios, crushed
1/3 cup pomegranate arils
Crackers, for serving
- In large bowl, beat cream cheese with Greek yogurt until smooth and creamy. Add syrup, mustard, garlic salt and pepper and mix until well combined.
- Transfer mixture to plastic wrap and mold it into log form. Refrigerate 3 to 4 hours until firm. (Note: Freeze it for faster firming, if necessary.) Reshape log if form was lost during firming.
- On serving plate, arrange pistachios and pomegranate arils and roll log over them to coat.
- Refrigerate coated log several additional hours to chill. Serve with crackers.
