Pumpkin Spice Protein Bites

  • 1/4 cup cacao nibs
  • 1/4 cup pumpkin seeds
  • 12 pitted dates
  • 1/4 cup pumpkin puree
  • 1 Tbsp. maple syrup
  • 1 Tbsp. organic coconut flour
  • 1/2 cup almond protein powder
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground allspice
  • 1/4 tsp. ground nutmeg

Optional:

  • 1/2 cup shredded coconut
  1. In food processor, pulse pumpkin seeds and cacao nibs into large crumbs; remove and set aside.
  2. In food processor, process dates into small crumbles. Add remaining ingredients, including reserved pumpkin seed mixture, and process until dough forms, about 1-2 minutes.
  3. Portion 1 tablespoon per serving and shape each into ball. If desired, roll each ball in coconut.
  4. Store covered and chilled.
