Dear Friends,

Nowadays, so many of the products you find in grocery stores are processed to the point that they can barely be considered food at all. Sometimes you can't even pronounce half of the things in the ingredients list! At Bob's Red Mill, we don't do it that way. When it comes to grains, beans and seeds, we think nature got it right. In their original state, these wholesome foods provide a magnificent combination of nutrients that are essential to health.

We honor this innate perfection by keeping our foods simple, and our pumpkin seeds are an excellent example of that practice. They are simply seeds from the pumpkin gourd that have had the outer shells removed to reveal the wondrous nutritional bounties stored within. It doesn't get much simpler than that. and we think that's just how it should be.

To your good health,

Bob Moore

Our shelled pumpkin seeds (also known as pepitas) are fresh, flavorful and terrifically crunchy. We leave them untoasted and unsalted, so you can prepare them just the way you like. Pepitas are a good source of iron, folate and magnesium, and provide 9 grams of protein per serving, making them a nutritious addition to any meal.

Sweet Potato, Carrot & Lentil Patties with Ginger Sauce

Vegetarian patties, known as tikkies, are a popular street food in India. They’re made with a combination of vegetables and a potato base. This protein-rich sweet potato version offers a tasty – and even more wholesome – twist on that tradition. Lentils, vegetables and seeds are bound together with gluten-free flour for dunkable patties that go perfectly with a simple sweet chili, sunflower and ginger sauce. Hard to believe, but they’re even better the next day for lunch! We don’t question the magic; we just enjoy them – twice. • 1 Tbsp. fresh parsley (diced)

  • Nutiva Avocado Oil (for frying)

Sauce

  • 3 Tbsp. sweet chili sauce
  • 2 Tbsp. SunButter Sunflower Seed Butter
  • 1 carrot (juiced)
  • 1 tsp. ginger (minced)
  1. If baking, preheat oven to 375 degrees F. If frying, follow directions below.
  2. After grating sweet potato and carrots, squeeze out water with hands. Use towel to pat out remaining moisture.

  6. With hands, form 12 palm-size patties.
  7. If baking, arrange patties on non-stick baking sheet and bake 20-25 minutes, flipping halfway through, until golden-brown.

  9. In bowl, stir together all sauce ingredients until smooth.
  10. Serve plated with sauce for dipping.
