Spicy Chicken Lettuce Wraps

  • 2 Tbsp. olive oil
  • 2 cloves garlic (minced)
  • Small yellow onion (diced)
  • 1 lb. ground chicken
  • 2 Tbsp. Frontier Co-Op Mexican Fiesta Seasoning
  • 8 oz. white mushrooms (quartered)
  • 6 oz. shredded carrots
  • 1 head hydroponic lettuce (separated into leaves)
  • Hot sauce (of choice)
  • Half bunch cilantro
  1. In sauté pan over medium-high heat, heat olive oil; add onion and garlic and sauté until fragrant.
  2. Add chicken, carrots, mushrooms and spice blend. Sauté until chicken is cooked through.
  3. Arrange individual lettuce leaves on plates or platter, spoon chicken and vegetables mixture onto each leaf.
  4. To serve, add hot sauce to taste and garnish with cilantro.
