Saffron Rose Ice Pops with Edible Flowers
The most refreshing treat of summer is here! And good news, this frozen snack is actually good for you. Made with rose water and saffron, a subtle spice, these pops are a great source of essential vitamins and minerals. Add a pop of color with your favorite variety of edible flowers and serve to both kids and adults for an aesthetically pleasing treat.
It’s time to step aside sugary frozen lemonade, these lemon and saffron-rose water ice pops are your new sweet to beat the heat!

Yields 6 ice pops
Ingredients
2 cups water
1/2 tsp. rose water
1 tsp. lemon juice
2 tsp. raw sugar or few drops stevia
Generous pinch saffron threads
Edible flowers

Directions
- Heat water in pan. Crush saffron strands and add to water.
- Add rose water and sweetener and mix. Mix in lemon juice. Let cool.
- Add edible flowers to ice pop mold and fill with saffron-rose water.
- Insert stick into each mold and freeze overnight.
- Before removing ice pops, place molds under warm water for a minute or two and then pull gently.
