Apple Cranberry Crisp
If you love apple crisp, you’ll love this apple cranberry recipe with sweet apples, tart berries and a spiced crumb topping ready for the holiday table. And this recipe has a better-for-you twist. Riced cauliflower blends into the filling and the oat crumble topping for an extra boost of nutrition.
Apple Cranberry Crisp
- 12 oz. cranberries
- 2 apples (cubed)
- 2 cups riced cauliflower (thawed)
- ¼ cup agave
- 2 Tbsp. lemon juice
- ¼ tsp. salt
Topping
- 1 cup rolled oats
- 1 cup riced cauliflower
- ¼ cup coconut oil
- ¼ cup agave
- ½ tsp. cinnamon
- Pinch salt
- Preheat oven to 375 degrees F.
- In 9x13 baking pan, combine cranberries, apples, riced cauliflower, agave, lemon juice and salt. Stir together.
- In medium bowl, mix together rolled oats, riced cauliflower, coconut oil, agave, cinnamon and salt.
- Spread oat topping evenly over cranberry mixture.
- Bake 30-35 minutes until cranberries and apples are cooked through. Serve warm.
